This natural-process coffee comes from the Jigesa Washing Station in Shakisso, Guji. Nearly 850 smallholder farmers contribute cherry from their small plots intercropped with corn, grains, and false banana (an important starch in the local diet). These farms sit at 1,800–1,950 meters above sea level and are shaded by native trees like Birbira and Acacia. Most producers here grow coffee organically by default, without access to chemical fertilizers or pesticides—yielding coffees that are as pure as they are expressive. In Ethiopia, traceability to individual farmers is rare due to the communal nature of processing. However, we make it a priority to return to the same washing stations each year, building consistency through trusted export partners. The coffee cherries are sun-dried on raised beds until they are dry enough to hull off the cherry skins exposing the green beans inside.
